Fried mini pizzas

Ingredients:

257 g Flatbread & Naan Mix or 1/2 pack

150 g warm water (105-115°F)

1/2 tbsp sugar

2 1/4 tsp (8 g) or 1 packet instant Yeast

Directions:

1. In the bowl of a stand mixer fitted with a paddle attachment, add the warm water, 1 tablespoon sugar, and dry yeast. Allow the mixture to sit for 3-5 minutes until the yeast mixture is nice and bubbly.

2. Add in the weighed flour, remaining sugar, butter & vinegar to the yeast mixture.
Mix into a soft dough with the paddle attachment, until smooth, about 4 minutes. (Start slow & increase to speed 4) The dough will look like a stiff cookie batter & that’s good.

3. Divide the dough into 12 equal pieces.

4. Take each portion and tuck in the edges towards the center and roll it into a smooth round ball. Cover them with a kitchen towel to prevent from drying.

5. Roll out the first ball you shaped into a small circle, about 3”diameter.

6. Continue rolling all the discs, Set on a parchment paper & allow rise 25-30 minutes, covered.

Tips: Preheat oven to (170°F) for ONE minute only. Now add the trays. Turn on oven light also, and even add a bowl of hot water on the oven floor to create a warm area to proof breads.

Heat oil in a dutch oven or pot over medium heat until it reaches 340F on a thermometer. Fry until golden brown, flipping half way through. Top with tomato sauce, fresh mozzarella & basil.
